Summer Means Mango Season (Part 2)

mango.jpgSo continuing where I left off yesterday… I was reminiscing about mango.

Anyway, here was my next thought as I heard my mom’s request to ask for mango. “What if I buy some mangoes from Foodland?” You know, the thought of buying mangoes brings the same kind of feelings I had back when bottled water was being introduced – “What?!?! Pay for water?!?! No way! I’ll just keep drinking water straight from the tap if you don’t mind!”

Here a note to my readers. Since those thoughts, I have become a fully converted bottled water drinker. Yeah. I went to T. W. D. A. (Tap Water Drinkers Anonymous) and I am proud to say that I’ve been sober from the effects of ground water contamination for several years now. Just don’t get me near a tap when I’m thirsty or else I’ll be tempted to drink from it. I’m also considering upgrading to alkaline water that has been oxygenated…

Okay. I’m a little off the subject now, but here is a special treat for you – my mom’s pickled mango recipe. She also wants me to include some tips about preparation so here goes.

1) Use only C&H white sugar – taste is affected otherwise…

2) Use only Heinz’ distilled white vinegar – again, taste is affected otherwise…

3) Use green mangoes that are young so you can cut through the seed easier.

4) If you can still find the gallon size glass jars, use those.

    Janie’s Pickled Mango

1 c. Heinz distilled white vinegar
1 c. C&H white sugar
2 tsp. hawaiian rock salt
1 gal. peeled and sliced green mangoes
1 8 oz package of Li Hing Mui
8 – 12 drops red food coloring

Peel and slice enough green mangoes to fill a one gallon container. Remove as much of the seed portion as possible. Set aside jar.

Boil vinegar, sugar and salt until everything has dissolved. Add food coloring.

Pour liquid mixture into gallon jar and let cool. Refrigerate.

Make this recipe! This is “broke da mout” kine stuff!

As for me, I can now say that I am ready and motivated to get those green mangoes. I’d better get to scouting the neighborhood for mango trees and making some new friends.
